FLORENTINES
(Yield: 2 dozen)
6 tablespoons butter or margarine
½ cup milk
¼ cup sugar
2 tablespoons honey
1 cup sliced almonds
½ cup chopped mixed candied fruit
¼ cup all-purpose flour
¾ cup semisweet sweet chocolate morsels
2 tablespoons shortening
Preheat oven to 350°F. Spray cookie sheets with non-stick
vegetable spray.
In a medium saucepan, combine butter, milk, sugar, and honey.
Bring to a full rolling boil, stirring occasionally. Remove from
heat. Stir in almonds, candied fruits, and flour. Drop by tablespoonfuls,
3-inches apart, on prepared cookie sheets. Using the back of the
spoon, spread the batter into 3-inch circles.
Bake 8 to 10 minutes or until the edges are lightly browned.
Cool 1 minutes. Remove from cookie sheets to waxed paper.
In a small, heavy saucepan, heat chocolate morsels and shortening
over low heat until melted, stirring occasionally. Evenly spread
the bottom of each cookie with 1 teaspoon of the chocolate mixture.
