FOLDOVERS
(Yield: 2½ dozen)

1 cup shredded Cheddar cheese
½ cup butter or margarine, softened
1-1/3 cups self-rising flour
2 tablespoons water
1 cup any flavor preserves
Milk

In a medium bowl, beat cheese and butter until well blended.  Beat in flour and water, until well blended.  Cover; chill overnight.

Preheat oven to 375°F.  Spray cookie sheets with non-stick vegetable spray.

Divide the dough in half.  On a lightly floured board, roll each half into a 10-inch square.  Cut into 16 2½-inch squares.  Place 1 teaspoonful preserves on each piece.  Fold over; seal the edges with the tines of a fork.  Place on prepared cookie sheets.  Brush with milk.

Bake 8 to 10 minutes or until lightly browned.  Remove from cookie sheets; cool on a wire rack.
