FRUIT
AND NUT COOKIE BAR
(Yield: 2 dozen)
½ cup honey
1/3 cup firmly packed brown sugar
¼ cup butter or margarine
5 cups bran flakes, crushed
1 cup raisins
1 cup flaked coconut
1 cup chopped walnuts
1 cup chopped dried apricots
¼ cup all-purpose flour
2 eggs, lightly beaten
Preheat oven to 400°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a small saucepan, combine honey, brown sugar, and butter; heat
until sugar dissolves.
In a large mixing bowl, combine bran flakes, raisins, coconut, walnuts,
apricots, and flour; toss to mix well. Pour in the warm honey mixture,
stir in eggs and mix to coat evenly. Press firmly into prepared baking
pan.
Bake 15 to 20 minutes or until golden brown. Cool in pan 10
minutes. Cut into bars.
