FRUITCAKE
COOKIE BARS
(Yield: 2½ dozen)
1 cup chopped mixed candied fruit
½ cup raisins
½ cup chopped nuts
3 tablespoons brandy
1¼ cups self-rising flour
¼ teaspoon ground cinnamon
¼ teaspoon allspice
¼ teaspoon ground nutmeg
¼ cup butter or margarine
½ cup sugar
1 egg
1 teaspoon grated orange rind
2 tablespoons orange juice
Orange Glaze (below)
In a medium bowl, combine candied fruit, raisins, and nuts; stir
in brandy. Let stand at room temperature for 2 hours.
Preheat oven to 350°F. Spray an 8x8-inch baking pan with
non-stick vegetable spray.
In a medium bowl, combine flour and spices; set aside.
In a large mixing bowl, beat butter and sugar until light and fluffy.
Beat in egg, orange rind, and juice. Stir in flour mixture, mixing
until smooth. Fold in fruit-nut mixture. Spread batter in prepared
baking pan.
Bake for 30 minutes or until lightly browned and pulls away from
the sides of the pan and is firm in the center. Brush the warm fruitcake
with Orange Glaze. Cool in pan on a wire rack. Cut into 2x1-inch
bars.
ORANGE GLAZE
1/3 cup confectioners’ sugar
2 teaspoons orange juice
In a small bowl, combine confectioners’ sugar and orange juice until
of spreading consistency.
