FUDGE
ECSTASIES
(Yield: 3 dozen)
2 cups semisweet chocolate morsels
2 1-ounce squares unsweetened chocolate
2 tablespoons butter or margarine
¼ cup all-purpose flour
¼ teaspoon baking powder
2 eggs, lightly beaten
2/3 cup sugar
1 teaspoon vanilla extract
1 cup chopped nuts
Preheat oven to 350°F. Spray cookie sheets with non-stick
vegetable spray.
In a medium, heavy saucepan, heat 1 cup chocolate morsels, unsweetened
chocolate, and butter, stirring constantly, until melted. Transfer
to a large mixing bowl; cool.
In a medium bowl, combine flour and baking powder; set aside.
Add eggs, sugar, and vanilla to the chocolate mixture; beat well.
Add flour mixture, blending thoroughly. Stir in remaining chocolate
morsels and nuts. Drop by teaspoonfuls onto prepared cookie sheets.
Bake 8 to 10 minutes or until the edges are firm and surface is dull
and cracked. Cool for 1 minute. Remove from cookie sheets;
cool on a wire rack.
