GOLDEN
FRUIT NUGGETS
(Yield: 3 dozen)
¾ cup butter or margarine
¾ cup sugar
1 egg, lightly beaten
1 teaspoon grated lemon rind
1 teaspoon vanilla extract
2 cups self-rising flour
1 cup flaked coconut
¾ cup raisins
¼ cup chopped candied cherries
Preheat oven to 350°F. Spray large baking sheets with non-stick
vegetable spray.
In a large mixing bowl, cream butter and sugar until light and fluffy.
Beat in egg, lemon rind, and vanilla. Gradually beat in flour until
blended. Stir in coconut, raisins, and cherries. Drop by teaspoonfuls,
2-inches apart, onto prepared baking sheets.
Bake for 15 minutes or until golden brown. Remove from baking
sheets; cool on a wire rack.
