GOOD
AND QUICK COOKIES
(Yield: 1½ dozen)
1 cup biscuit mix
1 egg
1 3-ounce package instant lemon pudding mix
10 tablespoons vegetable oil
In a large mixing bowl, combine all ingredients; beat until well
blended. Chill for 30 minutes.
Preheat oven to 350°F. Lightly spray cookie sheets with
non-stick vegetable spray.
Form dough into 1-inch balls. Place, 1-inch apart, on prepared
cookie sheets; flatten slightly with a glass.
Bake for 10 minutes or until lightly browned. Remove from cookie
sheets; cool completely on a wire rack.
