GUMDROP
COOKIES
(Yield: 2 dozen)
4 eggs
2 tablespoons water
2 cups firmly packed brown sugar
1 teaspoon ground cinnamon
2 cups self-rising flour
1 cup gumdrops, cut into small pieces
1 cup chopped walnuts
Orange Butter Frosting (below)
Preheat oven to 350°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a large mixing bowl, beat eggs with water until light; add brown
sugar and beat until well blended. Add cinnamon and flour, stirring
until blended. Stir in gumdrops and walnuts. Pour into prepared
baking pan.
Bake for 25 minutes or until a tester inserted in the center comes
out clean. Spread Orange Butter Frosting over warm cookies.
Cool in pan on a wire rack. Cut into squares.
ORANGE BUTTER FROSTING
¼ cup butter or margarine, softened
1 cup confectioners’ sugar
1 egg yolk
Grated rind of 1 orange
2 tablespoons orange juice
In a medium bowl, combine all ingredients; beat until well blended
and smooth.
