HERMIT COOKIES
(Yield: 48 servings)

1  cup firmly packed brown sugar
¼ cup butter or margarine;  softened
¼ cup shortening
¼ cup cold coffee
1 egg
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1¾ cups self-rising flour
1¼ cups raisins
¾ cup chopped walnuts

Preheat oven to 375°F.  Lightly spray cookie sheets with non-stick vegetable spray.

In a large mixing bowl, combine brown sugar, butter, shortening, coffee, egg, cinnamon, and nutmeg; beat until well blended and fluffy.  Stir in flour until well blended.  Stir in raisins and walnuts.  Drop, 2-inches apart, by rounded teaspoonfuls onto prepared cookies sheets.

Bake 8 to 10 minutes or until just set.  Remove from cookies sheets; cool completely on a wire rack.
