HIKER BARS
(Yield: 2 dozen)

½ cup chunky peanut butter
2/3 cup butter or margarine, softened
2 bananas, mashed
½ cup molasses
1 cup sugar
1 teaspoon vanilla extract
4 eggs
½ teaspoon ground cinnamon
1/8 teaspoon ground ginger
2/3 cups whole wheat flour
1 cup self-rising flour
3 cups crushed corn flakes
1 cup semisweet chocolate morsels
1 cup chopped salted peanuts
1¼ cups chopped dates

Preheat oven to 350°F.  Spray a 13x9-inch baking pan with non-stick vegetable spray.

In a large mixing bowl, cream peanut butter and butter until well blended.  Add banana, molasses, sugar, and vanilla; beat until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Stir in cinnamon, ginger, flours, and corn flakes until blended.  Stir in the chocolate morsels, peanuts, and dates.  Pour into prepared baking pan.

Bake 35 to 45 minutes or until a tester inserted in the center comes out clean.  Cool in pan on a wire rack.  Cut into bars.
