Orange Biscuits)
(Yield: 4½ dozen)
2 eggs, separated
1 cup sugar
6 tablespoons orange juice
6 tablespoons butter or margarine, melted
1 tablespoon grated orange rind
1 teaspoon vanilla extract
2½ cups self-rising flour
1 egg beaten with 1 tablespoon water
Sesame seeds
In a large mixing bowl, beat egg whites until stiff. Beat in
egg yolks, one at a time. Beat in sugar, orange juice, butter, orange
rind, and vanilla. Gradually blend in flour until mixtures forms
a ball. Knead the dough for 10 minutes until smooth and elastic.
Preheat oven to 350°F. Spray baking sheets with non-stick
vegetable spray.
Break off small pieces of the dough. Roll into 6-inch ropes;
coil into snail shapes. Arrange on prepared baking sheets.
Brush with egg mixture; sprinkle with sesame seeds.
Bake 25 to 35 minutes or until golden brown. Remove from baking
sheets; cool on a wire rack.
