LEMON
SQUARES
(Yield: 12 servings)
2 cups self-rising flour
½ cup confectioners’ sugar
1 cup butter or margarine
4 eggs
2 cups sugar
½ cup lemon juice
¼ cup self-rising flour
Preheat oven to 350°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a large mixing bowl, combine flour and confectioners’ sugar; cut
in butter until mixture resembles coarse crumbs. Press into prepared
baking pan.
Bake for 25 minutes.
In a large mixing bowl, combine eggs, sugar, and lemon juice; beat
until well blended. Stir in flour. Pour over baked crust.
Bake 25 minutes. Dust with confectioners’ sugar. Cool
in pan on a wire rack. Cut into bars.
