MINCEMEAT
COOKIES
(Yield: 3 dozen)
½ cup shortening
¼ cup firmly packed brown sugar
1 egg, lightly beaten
2 tablespoons milk
1½ cups self-rising flour
2/3 cup prepared mincemeat
Preheat oven to 375°F. Spray baking sheets with non-stick
vegetable spray.
In a large mixing bowl, cream shortening and sugar until light and
fluffy. Add egg and milk, beating well. Stir in flour and mincemeat
until well blended. Drop by teaspoonfuls, 2-inches apart, onto prepared
baking sheets.
Bake 8 to 10 minutes or until lightly browned. Cool on a wire
rack.
