MOCHA
WALNUT COOKIES
(Yield: 2 dozen)
2 cups semisweet chocolate morsels
2 tablespoons instant coffee granules
2 teaspoons boiling water
1¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt
½ cup butter or margarine, softened
½ cup sugar
½ cup firmly packed brown sugar
1 egg, lightly beaten
½ cup chopped walnuts
Preheat oven to 350°F.
In a double boiler, over hot water, melt ½ cup chocolate morsels;
stir until smooth. Remove from heat; set aside. In a cup, dissolve
coffee granules in boiling water; set aside. In a small bowl, combine
flour and, baking soda, and salt; set aside.
In a large mixing bowl, beat butter, sugars, and coffee mixture until
light and fluffy. Add egg and melted chocolate, mixing well.
Stir in flour mixture, remaining chocolate morsels, and walnuts.
Drop by rounded tablespoonfuls onto UNGREASED cookie sheets.
Bake 10 to 12 minutes. Let stand for 2 minutes; remove
from cookie sheets and cool on a wire rack.
