NO GUILT BROWNIES
(Yield: 16 servings)

3 1-ounce squares unsweetened 
                     chocolate, chopped
1 cup sugar
¾ cup self-rising flour
¾ cup cottage cheese
3 egg whites
1 teaspoon vanilla extract
Confectioners' sugar

Preheat oven to 350°F.  Spray an 8x8-inch baking dish with non-stick vegetable spray.

In a small saucepan, over low heat, melt chocolate; cool slightly.

In a food processor combine sugar, flour, cottage cheese, egg whites, and vanilla; process until smooth.  Add melted chocolate; process until well blended.  Pour into prepared baking dish.

Bake 20 to 25 minutes or until just set.  Sprinkle with confectioners' sugar.  Cut into squares.
