(Yield: 32 squares)
3 cups self-rising flour
¼ cup firmly packed brown sugar
½ cup butter or margarine
3 cups rolled oats
2 eggs, lightly beaten
1-1/3 cups buttermilk
Honey Butter (below)
Preheat oven to 400°F. Spray 2 9x9-inch baking pans with
non-stick vegetable spray.
In a large mixing bowl, combine flour and sugar; cut in butter until
mixture resembles coarse crumbs. Add oats; toss well. Make
a well in the center. Add eggs and buttermilk; stir until dough forms.
Spread the dough evenly in prepared baking pans. Score each pan of
dough into 16 pieces.
Bake for 25 minutes or until golden brown. Serve warm with
Honey Butter.
HONEY BUTTER
1 cup butter or margarine
¼ cup honey
In a small bowl, blend butter and honey until well combined.
