OATMEAL DELIGHTS
(Yield: 2 dozen)

½ cup maraschino cherries, drained
4 teaspoons rum
½ cup butter or margarine, softened
1 cup firmly packed brown sugar
1 egg, lightly beaten
Grated rind of 1 orange
¾ cup self-rising flour
1½ cups rolled oats

Preheat oven to 375°F.  Spray 2 large baking sheets with non-stick vegetable spray.

In a small bowl, combine cherries and rum; set aside.

In a large mixing bowl, cream butter and brown sugar until light and fluffy.  Beat in egg and orange rind.  Add flour and oats, stirring until blended.  Stir in cherry mixture.  Drop by tablespoonfuls, about 2-inches apart, onto the prepared baking sheets.

Bake 8 to 10 minutes or until lightly browned.  Cool completely before removing from baking sheet.
