OATMEAL
LACE COOKIES
(Yield: 6 dozen)
2 cups rolled oats
½ teaspoon baking soda
¼ teaspoon salt
1 cup firmly packed brown sugar
¼ cup butter or margarine
½ cup shortening
1 egg, lightly beaten
Preheat oven to 375°F. Spray cookie sheets with non-stick
vegetable spray.
In a medium bowl, combine oats, baking soda, and salt; set aside.
In a large saucepan, over low heat, cook sugar, butter, and shortening,
stirring constantly, until fats melt. Remove from heat; stir in oat
mixture. Add egg; mix thoroughly. Drop by teaspoonfuls, 3-inches
apart, onto prepared cookie sheets.
Bake 6 to 7 minutes. Cool for 2 minutes; remove from cookie
sheets. Cool completely on a wire rack.
