OATMEAL
PAN COOKIES
(Yield: 3 dozen)
1 cup self-rising flour
½ teaspoon ground cinnamon
1 cup butter or margarine, softened
¾ cup sugar
¾ cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract
3 cups rolled oats
1 12-ounce package butterscotch morsels
Preheat oven to 375°F. Spray a 15x10-inch jelly-roll pan
with non-stick vegetable spray.
In a medium bowl, combine flour and cinnamon; set aside.
In a large mixing bowl, beat butter, sugars, eggs, and vanilla until
light and fluffy. Gradually add flour mixture. Stir in oats
and butterscotch morsels. Spread evenly in prepared jelly-roll pan.
Bake 20 to 25 minutes or until golden brown. Cool in pan on
a wire rack. Cut into 2-inch squares.
