OATMEAL-PECAN COOKIES
(Yield: 2 dozen)

2/3 cup butter or margarine, softened
2/3 cup sugar
½ cup firmly packed brown sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
¾ cup self-rising flour
1¼ cups rolled oats
1 cup raisins
1 cup chopped pecans

Preheat oven to 325°F.  Spray large baking sheets with non-stick vegetable spray.

In a large mixing bowl, cream butter and sugars until light and fluffy.  Beat in egg and vanilla.  Add flour and oats, stirring until just blended.  Stir in raisins and pecans.  Drop by tablespoonfuls, 2-inches apart, onto prepared baking sheets.

Bake 15 to 17 minutes or until lightly browned.  Remove from the baking sheets; cool on a wire rack.
