OLD-TIME
SOFT SUGAR COOKIES
(Yield: 4 dozen)
½ cup shortening
½ cup sugar
½ cup firmly packed brown sugar
1 egg
¾ cup buttermilk
1 teaspoon vanilla extract
2 cups self-rising flour
Cinnamon Sugar (below)
In a large mixing bowl, cream shortening and sugars until light and
fluffy. Add egg, beating until well blended. Beat in buttermilk
and vanilla. Stir in flour until well blended. Chill dough
for 1 hour.
Preheat oven to 400°F. Spray 2 large baking sheets with
non-stick vegetable spray.
Drop dough, 2-inches apart, by rounded teaspoonfuls onto prepared
baking sheets; sprinkle with Cinnamon Sugar.
Bake, one baking sheet at a time, 7 to 9 minutes or until set.
Remove from cookie sheets; cool completely on a wire rack.
CINNAMON SUGAR
¼ cup sugar
1 teaspoon cinnamon
In a small bowl, combine all ingredients; mix well.
