ORANGE-COCONUT COOKIES
(Yield: 8 dozen)

1 cup butter or margarine, softened
1 cup firmly packed brown sugar
½ cup sugar
1 egg
1 egg yolk
1½ cups self-rising flour
1½ tablespoons water
1½ cups rolled oats
1 cup flaked coconut
10 candy orange slices, finely chopped

In a large mixing bowl, cream butter and sugars until light and fluffy.  Add egg and egg yolk, beating until well blended.  Beat in flour.  Stir in water, oats, coconut, and candy.  Chill at least 1 hour.

Preheat oven to 325°F.  Spray cookie sheets with non-stick vegetable spray.

Drop dough by teaspoonfuls, about 2-inches apart, onto prepared cookie sheets.

Bake 12 to 15 minutes or until lightly browned.  Remove from cookie sheets; cool completely on a wire rack.
