ORANGE
DROP COOKIES
(Yield: 4 dozen)
2 cups butter or margarine, softened
½ cup firmly packed brown sugar
1 egg, lightly beaten
¼ cup orange marmalade
2 tablespoons grated orange rind
½ teaspoon ground coriander
2 carrots, grated
1-1/3 cups self-rising flour
½ cup chopped raisins
½ cup finely chopped pecans
Preheat oven to 350°F. Spray baking sheets with non-stick
vegetable spray.
In a large mixing bowl, cream butter and brown sugar until light
and fluffy; beat in eggs. Stir in marmalade, orange juice, coriander,
and carrots. Fold in flour, raisins, and pecans. Drop by rounded
teaspoonfuls, about 2-inches apart, onto prepared baking sheets.
Bake 12 to 15 minutes or until golden brown around the edges.
Remove from baking sheets; cool completely on a wire rack.
