ORANGE
PEACH CHEWS
(Yield: 4½ dozen)
1 cup all-purpose flour
1 teaspoon baking soda
1 cup butter or margarine
¾ cup firmly packed brown sugar
½ cup sugar
1 egg, lightly beaten
1 tablespoon orange juice
2½ cups rolled oats
1 cup chopped dried peaches
½ cup finely chopped nuts
2 cups confectioners’ sugar
2 to 3 tablespoons orange juice
Preheat oven to 375°F. Spray cookie sheets with non-stick
vegetable spray.
In a medium bowl, combine flour and baking soda; set aside.
In a large mixing bowl, cream butter and sugars until light and fluffy.
Add egg and orange juice; beat well. Add flour mixture, blending
thoroughly. Stir in oats, peaches, and nuts. Drop by teaspoonfuls
on prepared cookie sheets.
Bake 8 to 10 minutes or until delicately browned. Cool on a
wire rack.
In a small bowl, combine confectioners’ sugar with enough orange
juice to make an icing of drizzling consistency. Drizzle over the
cookies.
