ORANGE-WALNUT COOKIES
(Yield: 6 dozen)

1 cup butter or margarine, softened
½ cup sugar
½ cup firmly packed brown sugar
1 tablespoons grated orange rind
2 tablespoons orange juice
1 egg, lightly beaten
1 teaspoon vanilla extract
3 cups self-rising flour
1 cup chopped walnuts

In a large mixing bowl, cream butter and sugars until light and fluffy.  Beat in orange rind, juice, egg, and vanilla until well blended.  Stir in flour and walnuts, blending thoroughly.  Divide dough in half; shape into 8-inch rolls.  Wrap in plastic wrap; chill for 2 hours.

Preheat oven to 375°F.  Spray cookie sheets with non-stick vegetable spray.

Cut the dough into ¼-inch slices.  Place on prepared cookie sheets.

Bake 10 to 12 minutes or until lightly browned.  Remove from cookie sheets; cool on a wire rack.
