PEANUT BUTTER BARS
(Yield: 4 dozen)

½ cup butter or margarine, softened
½ cup firmly packed brown sugar
½ cup sugar
1 egg
1 teaspoon vanilla extract
1/3 cup crunchy peanut butter
1 cup self-rising flour
1 cup rolled oats
1 cup semisweet chocolate morsels
Vanilla Glaze (below)

Preheat oven to 350°F.  Spray a 13x9-inch baking pan with non-stick vegetable spray.

In a large mixing bowl, cream butter and sugars until light and fluffy.  Beat in egg and vanilla.  Blend in peanut butter.  Stir in flour until well blended.  Stir in oats.  Spread the batter in prepared baking pan.  Sprinkle with chocolate morsels.

Bake for 25 minutes or until a tester inserted in the center comes out clean.  While still warm drizzle with Vanilla Glaze.  Cool in pan on a wire rack.  Cut into bars.

VANILLA GLAZE

¼ cup confectioners’ sugar
¼ cup peanut butter
2 tablespoons butter or margarine, softened
¼ cup hot milk
½ teaspoon vanilla extract

In a medium bowl, combine all ingredients; beat until smooth.
