PEANUT
BUTTER COOKIES II
(Yield: 3 dozen)
¾ cup peanut butter
½ cup shortening
1¼ cups firmly packed brown sugar
3 tablespoons milk
1 tablespoon vanilla extract
1 egg
1¾ cups self-rising flour
Preheat oven to 375°F.
In a large mixing bowl, combine peanut butter, shortening, sugar,
milk, and vanilla; beat until well blended. Add eggs; beat until
just blended. Add flour, mixing until just blended. Drop by
heaping teaspoonfuls, 2-inches apart, onto UNGREASED baking sheets.
Flatten with the tines of a fork in crisscross pattern, if desired.
Bake 7 to 8 minutes, or until set and beginning to turn brown.
Cool for 2 minutes before removing from baking sheets.
