PEANUT BUTTER COOKIES VI
(Yield: 3 dozen)

½ cup chunky peanut butter
½ cup butter or margarine, softened
½ cup sugar
½ cup firmly packed brown sugar
1 egg
1¼ cups self-rising flour
½ cup sugar

In a large mixing bowl, beat peanut butter, butter, and sugars until light and fluffy.  Beat in egg and vanilla.  Stir in flour.  Cover; chill for 3 hours.

Preheat oven to 375°F.  Spray large baking sheets with non-stick vegetable spray.

Measure sugar into a small bowl.

Shape 1 tablespoon of dough at a time into a ball.  Roll in sugar.  Place, 3-inches apart, on prepared baking sheets.  With the tines of a fork, make a crisscross pattern on each cookie, flattening slightly.

Bake 10 to 12 minutes or until lightly browned.  Remove from baking sheets; cool on a wire rack.
