PEANUT BUTTER SANDWICH 
COOKIES
(Yield: 3 dozen)

1 cup butter or margarine, softened
1 cup peanut butter
2/3 cup sugar
2/3 cup firmly packed brown sugar
3 cups self-rising flour
6 tablespoons orange juice
Peanut butter

In a large mixing bowl, beat butter and peanut butter until well blended.  Beat in sugars until light and fluffy.  Stir in flour alternately with orange juice until well blended.  Divide dough in half; shape into 7-inch rolls.  Wrap in plastic wrap; chill for 2 hours.

Preheat oven to 350°F.  Spray cookie sheets with non-stick vegetable spray.

Cut the dough into ¼-inch slices.  Place half the slices on prepared cookie sheets.  Spread 1 teaspoon peanut butter on center of each slice.  Cover with remaining slices; seal the edges with the tines of a fork.

Bake 12 to 15 minutes or until lightly browned.  Remove from cookie sheets; cool on a wire rack.
