PEANUT
BUTTER SQUARES
(Yield: 3 dozen)
½ cup peanut butter
1/3 cup shortening
1½ cups firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract
1½ cups self-rising flour
¼ cup milk
Peanut Butter Frosting (below)
1/3 cup chopped peanuts
Preheat oven to 350F. Spray a 15x10-inch baking pan with non-stick
vegetable spray.
In a large mixing bowl, cream peanut butter, shortening, and sugar
until fluffy. Beat in eggs and vanilla. Stir in flour alternately
with milk, blending thoroughly after each addition. Spread in prepared
baking pan.
Bake for 20 minutes or until lightly browned. Cool in pan on
a wire rack. Frost with Peanut Butter Frosting; sprinkle with peanuts.
Cut into bars.
PEANUT BUTTER FROSTING
1½ cups confectioners’ sugar
2 tablespoon peanut butter
2 tablespoons milk
In a small bowl, combine all ingredients, blending well to spreading
consistency.
