PEANUT BUTTER AND JELLY
STREUSEL BARS
(Yield: 3 dozen)

½ cup shortening
1¼ cups firmly packed brown sugar
¾ cup creamy peanut butter
3 tablespoons milk
1 tablespoon vanilla extract
1 egg
1¾ cups self-rising flour
1 cup strawberry jam
½ cup rolled oats

Preheat oven to 350°F.  Spray a 13x9-inch baking pan with non-stick vegetable spray.

In a large mixing bowl, combine shortening, brown sugar, peanut butter, milk, and vanilla; beat until well blended.  Add egg; beat until blended.  Gradually beat in flour until just blended.  Press two-thirds of the mixture into the bottom of the prepared baking pan.  Spread jam evenly over the dough to within ¼-inch of the sides.

Combine remaining dough with the oats; drop by spoonfuls onto the jam layer.  Press lightly to even out the dough layer.

Bake 20 to 25 minutes or until the edges and streusel topping are lightly browned.  Cool in pan on a wire rack.  Cut into bars.
