PEANUT
CRUNCHIES
(Yield: 4 dozen)
1¾ cups all-purpose flour
1 cup butter or margarine, softened
½ cup sugar
½ cup firmly packed brown sugar
1 teaspoon vanilla extract
1 egg yolk
1 6-ounce package semisweet chocolate morsels
2/3 cup chopped peanuts
Preheat oven to 275F. Spray a 15x10-inch jelly-roll pan with
non-stick vegetable spray.
In a large mixing bowl, combine flour, butter, sugars, vanilla, and
egg yolk; beat until well blended. Spread the dough evenly in prepared
jelly-roll pan.
Bake for 1 hour and 10 minutes or until golden brown.
In a heavy saucepan, heat chocolate morsels until melted, stirring
frequently. Remove from heat. Pour over hot baked layer, quickly
spreading over the top with a spatula; sprinkle with peanuts. Cut
lengthwise into 4 strips, then cut each into 12 pieces. Cool in pan
on a wire rack.
