PECAN
COOKIE ROLLS
(Yield: 50 cookies)
1 cup butter or margarine, softened
¼ cup confectioners’ sugar
2 cups self-rising flour
1 tablespoon cold water
1 teaspoon vanilla extract
2 cups chopped pecans
Confectioners’ sugar
Preheat oven to 275°F. Spray 2 cookie sheet with non-stick
vegetable spray.
In a large mixing bowl, beat butter and confectioners’ sugar until
light and fluffy. Add flour, water, and vanilla, beating until just
blended. Stir in pecans. Roll level tablespoonfuls of dough
between floured hands into date-like shapes about 2-inches long.
Place, 1-inch apart, on prepared cookie sheets. With the back of
a knife, make a lengthwise crease down each cookie.
Bake for 1 hour or until cookies are lightly browned on the bottom.
While still warm roll in confectioners’ sugar. Cool completely.
