PECAN COOKIES
(Yield: 3 dozen)

¾ cup butter or margarine, softened
½ cup firmly packed brown sugar
¼ cup maple syrup
1 egg
1 teaspoon vanilla extract
2 cups self-rising flour
½ teaspoon ground nutmeg
½ cup chopped pecans
¼ cup sugar

Preheat oven to 350°F.  Spray cookie sheets with non-stick vegetable spray.

In a large mixing bowl, cream butter and brown sugar until light and fluffy.  Add maple syrup, egg, and vanilla; beat until well blended.  Stir in flour and nutmeg until well blended.  Stir in pecans.

Shape dough by teaspoonfuls into smooth balls; roll in sugar.  Place, 1-inch apart, on prepared cookie sheets.

Bake 10 to 12 minutes or until lightly browned.  Remove from cookie sheets; cool completely on a wire rack.
