PECAN
MACAROONS
(Yield: 2½ dozen)
2-2/3 cups flaked coconut
2/3 cup sugar
¼ cup self-rising flour
4 egg whites
1 teaspoon vanilla extract
1 cup finely chopped pecans
Preheat oven to 325°F. Spray large baking sheets with non-stick
vegetable spray.
In a large mixing bowl, combine coconut, sugar, and flour.
Stir in egg whites and vanilla, mixing thoroughly. Stir in pecans.
Drop by teaspoonfuls onto prepared baking sheets.
Bake for 20 minutes or until edges are golden brown. Carefully
remove from baking sheets; cool completely on a wire rack.
