RAISIN
BRAN COOKIES
(Yield: 16 cookies)
2 cups raisin bran cereal, crushed
1 cup whole wheat flour
1 cup self-rising flour
¾ cup butter or margarine, softened
2/3 cup sugar
½ cup firmly packed brown sugar
2 eggs
Preheat oven to 325°F.
In a medium bowl, combine cereal, wheat flour, and flour; set aside.
In a large mixing bowl, cream butter and sugars until light and fluffy.
Add eggs, one at a time, beating well after each addition. Stir in
flour mixture until thoroughly blended. Drop by ¼ cup measure
onto UNGREASED baking sheet.
Bake 12 to 14 minutes or until lightly browned. Remove from
baking sheet; cool on a wire rack.
