RAISIN
HONEY CHEWS
(Yield: 3 dozen)
¾ cup shortening
¾ cup sugar
½ cup honey
1 egg, lightly beaten
1¼ cups self-rising flour
2 cups rolled oats
1 cup raisins
Preheat oven to 375°F. Spray cookie sheets with non-stick
vegetable spray.
In a large mixing bowl, cream shortening, sugar, honey, and egg until
light and fluffy. Stir in flour and oats, mixing well. Stir
in raisins. Drop by tablespoonfuls, 2-inches apart, onto prepared
cookie sheets.
Bake 8 to 10 minutes or until delicately browned. Let stand
for 2 minutes. Remove from cookie sheets; cool on a wire rack.
