RAISIN
OATMEAL COOKIES
(Yield: 3 dozen)
1 cup butter or margarine, softened
¾ cup sugar
¾ cup firmly packed brown sugar
2 eggs, lightly beaten
1½ teaspoons vanilla extract
2 cups self-rising flour
2 cups rolled oats
1 cup raisins
Preheat oven to 375°F. Spray baking sheets with non-stick
vegetable spray.
In a large mixing bowl, cream butter, sugars, eggs, and vanilla until
light and fluffy. Stir in flour and oats until well blended.
Stir in raisins. Drop by tablespoonfuls, 1-inch apart, on prepared
baking sheets.
Bake 10 to 12 minutes or until lightly browned. Remove from
cookie sheets; cool on a wire rack.
