SCRUMPTIOUS
BUTTERSCOTCH BARS
(Yield: 1½ dozen)
1 12-ounce package butterscotch morsels
1/3 cup butter or margarine
2 cups graham cracker crumbs
1 cup chopped almonds
1 8-ounce package cream cheese, softened
1 14-ounce can condensed milk
1 teaspoon almond extract
1 egg
Preheat oven to 350°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a small saucepan, melt butterscotch morsels with butter.
Stir in cracker crumbs and almonds until well combined. Press half
the mixture on the bottom of the prepared baking pan.
In a medium bowl, beat cream cheese until fluffy. Add condensed
milk, almond extract and egg; beat thoroughly. Pour into prepared
pan; top with remaining crumb mixture.
Bake 25 to 30 minutes or until a tester inserted in the center comes
out clean. Cool in pan on a wire rack; refrigerate for 2 hours.
Cut into bars.
