SHORTBREAD
COOKIES
(Yield: 4 dozen)
1 cup butter or margarine, softened
½ cup sugar
1 egg yolk
2 teaspoons vanilla
2 cups self-rising flour
1 cup raisins
1 cup chopped nuts
Preheat oven to 400°F. Spray baking sheets with non-stick
vegetable spray.
In a large bowl, cream butter and sugar until light and fluffy.
Add egg yolk, and vanilla, beating until well blended. Stir in flour,
blending well. Stir in raisins and nuts. Drop by teaspoonfuls
onto prepared baking sheets.
Bake 10 to 12 minutes or until delicately browned on the bottom.
