SNOWBALLS
(Yield: 3½ dozen)
1 cup peanut butter morsels
½ cup semisweet chocolate morsels
¼ cup confectioners’ sugar
¼ cup finely chopped nuts
3 cups self-rising flour
1¼ cups butter or margarine, softened
1 tablespoon vanilla extract
Confectioners’ sugar
In a double boiler, over hot water, melt peanut butter morsels and
chocolate morsels; stir until smooth. Remove from heat. Add
confectioners’ sugar and nuts; mix well. Chill for 2 hours.
Roll into ¾-inch balls; set aside.
Preheat oven to 400°F.
In a large mixing bowl, combine flour, butter, and vanilla; knead
until well blended. Shape into an 11-inch log; cut into ¼-inch
slices. Shape each dough slice around filling. Roll into a
ball and place on UNGREASED cookie sheet.
Bake for 10 minutes or until delicately browned. Remove from
cookie sheet; cool on a wire rack. Roll in confectioners’ sugar.
