Butterscotch Cookies

~24 Ritz crackers

~1 c smooth peanut butter

~2 c butterscotch morsels

Spread half the crackers with peanut butter & top with remaining crackers. Melt morsels in the top of a double boiler. Dip Ritz sandwiches into the melted butterscotch. Place on wax paper for coating to set. Makes 1 dozen cookies.
