Suss-Saures Kartoffelgemuse (Sweet-And-Sour Potatoes)
8 each new potatoes; boiled in skin
1 each onion; medium, diced
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup sugar
4 each bacon; slices, cut up
3/4 cup vinegar
Peel and cube potatoes. Add diced onion, salt, pepper, and sugar.
Reserve in a covered bowl. In a small frypan, fry the bacon until crisp.
Add the vinegar to the hot bacon and bring to a boil. Pour immediately over potato mixture, mix well. If too tart, add a little more sugar before serving. Cut endive or leaf lettuce add to this is very good.
Yield: 4 servings
Thyme Potatoes
3 Lb Boiled Potatoes
3/4 C Olive Oil
2 Tbsp Butter
1/2 Med Onion -- chopped
1 Tsp Thyme
1/4 Tsp Garlic Powder
Salt And Pepper -- to taste
1 Tbsp Red Wine Vinegar
Saute onion in 1/2 cup oil and butter. Add thyme, garlic powder, salt and pepper, and red wine vinegar. Dice potatoes and pour sauce over them. Add additional oil if necessary.

Salt Potatoes are simply baby red potatoes scrubbed and boiled in their jackets in HEAVILY salted water. Add salt to water until no more salt will dissolve and salt crystals stay on the bottom of the pot. Add potatoes and simmer. When the potatoes are tender, drain the water ... you'll have lots of salt residue in the pot ... and melt butter over the potatoes.
