Tanner's Potato Casserole (Hash Browns)
1 lb Hash browns
1/8 c Margarine; softened
1 c Cream of celery soup
3 oz Cheddar; grated
3 oz Velveeta
4 oz Sour cream
1 ts Salt
1/2 c Seasoned bread crumbs
Break up potatoes and pour them into a 13 X 9 pan. Mix margarine, soup, cheeses and salt. Spread on top of potatoes. Top with bread crumbs. Bake at 350 for 50 minutes

Tuna Chip Casserole (Potato Chips)
1 1/2 cups Potato chips -- crushed
1 can Tuna -- drained and flaked
8 ounces Peas -- drained
1 can Cream of mushroom soup
1 cup Milk
Combine all the ingredients EXCEPT 1/2 C. of crushed potato chips. Turn into 1 1/2qt. casserole. Border with remaining potato chips. Bake in a 350 oven about 50 to 60 minutes
Tunados (Potato Chips)
3 Avocados
1 cn Tuna; draind and chunked
1/2 c Celery; chopped finely
1 tb Chives; chopped
2 tb Italian salad dressing
1/4 c Mayonnaise
3 tb Cheese; grated, mild
1/2 c Potato chips; crushed
Cut avocados in half lengthwise, remove pits, but do not peel. Combine tuna, celery, chives, Italian dressing, and mayonnaise. Mix well. Spoon into avocado halves and arrange on shallow baking dish. Pour 1/2 inches boiling water into the bottom of dish. Sprinkle tops of avocados with cheese. Bake at 400F for approximately 15 minutes. Before serving, sprinkle with the crushed potato chips.

2 large or 4 medium Idaho
potatoes
3 Tbsp. butter
3 Tbsp. vegetable oil
1 medium onion, sliced thin
and separated into rings
salt and pepper
Peel potatoes; slice into thin slices. Heat butter and oil in heavy (10-inch) skillet. Spread thin layer of potatoes into fat. Cook until golden brown (about 5 minutes). Then layer onion rings and remaining potato slices in skillet. Turn with broad spatula. Cook potatoes until golden brown. Turn again. Cook and turn until potatoes are crisp and brown. Salt and pepper to taste.
