Pizza Dough

Ingredients:

3 Cups All-Purpose Flour
1 pkg. Dry Active Yeast or Fresh Yeast
1 Cup Warm Water
1 teaspoon Salt
2 tablespoons Olive Oil
Vegetable Oil
Pizza Sauce
16" - 18" Pizza Pan
Directions:

In a large bowl, mix together all dry ingredients and set aside.  In a small bowl, mix water, yeast, and oil.  Stir together until yeast dissolves.  While stirring flour with a fork, slowly add the liquid mixture in very small portions.  When both mixtures have been combined, knead the dough together with your hands until all is well blended.  The dough should be moist but should not stick to your hands like glue kneading.  If dough is too dry sprinkle extra water while continuing to knead or sprinkle flour if dough is too wet.  Continue to knead dough for a few more minutes.

Grease a large bowl with oil, butter, or margarine.  Place dough inside bowl, cover with a cloth or paper towel, and set aside in a warm place for one hour or until size has doubled.

Remove bowl from dough and on a floured surface with your palms or fists, work the dough by folding and punching it together.  DO NOT squeeze and "rip" the dough with your fingers.  After a minute, form the dough back into a ball shape.  Depending on how you enjoy your pizza crust you can either make one or two pizzas.  Cut the ball in half if you want to make two thin crust pizzas.

Flatten the dough out with your hands to form a thick circle.  With either a rolling pin or your hands, work the dough into a flat even pizza crust shape.  DO NOT MAKE THE CENTER THIN AND THE OUTER EDGES THICK, THIS IS VERY IMPORTANT FOR LATER ON.  You and everyone else want to enjoy ALL the pizza as it is meant to be, not half pizza and half bread.

Preheat the oven to about 400 F.  Liberally oil your pizza pan.  Place pizza dough onto the pan  and form it with your hands so that it covers the whole pan.  Remember to evenly spread the dough.  Do not make the edges thicker than the center.

Spoon the pizza sauce onto the dough to make a light coating.  Make sure to cover all the dough and do make a large lake of sauce in the middle.

Place the pan into the oven and cook for approximately 6-7 minutes.  Remove from the oven and set aside.  The pizza sauce should have a slightly dry glazed look to it.
