Michaels’ Sweet Chilli Sauce

Ingredients:

125g chillies
125g sultanas
4 cloves garlic, peeled
2 tspns chopped fresh ginger
3/4 cup white vinegar
3/4 cup water
1 1/2 cups white sugar
2 tspns salt

Method:
Snip stalks off chillies (include the seeds for extra heat), put in the blender with sultanas, garlic, ginger and enough vinegar to puree the mixture.

Pour into an enamel or stainless steel sauce pan and add the rest of the ingredients.

Bring mix to the boil and simmer, stirring occasionally, until the sauce has slightly thickened.

Cool and pour into a jar, refrigerate, and enjoy.
