Shez's Sun and Moon Eggs
Split a hard boiled egg in half, scoop out the yolk and place the
whites on a bed of dark red cabbage leaves. Mix the egg yolks with
melted butter until soft, then well mashed mango chutney to taste
(other chutneys would work just as well). Pile the mixture back into
the egg white, using an icing piper or funnel shaped implement. Pipe
the soft cheese of your choice, around the edges of the eggs, sprinkle
with red paprika and serve.
