Teriyaki-don

Ingredients
6-8 Cups hot cooked rice
3 breasts of chicken
Any amount of fresh broccoli
Any amount of mushroom
Any amount of red capsicum
Sauce
7 Tbsps sake
7 Tbsps mirin
6 Tbsps dark soy sauce
1 Tbsp brown sugar
150mL of water
Preparation
Boil plain white rice.
Slice chicken breast into 7 mm slices
Chop broccoli, red capsicum and mushroom
Sauce
Mix ingredients in saucepan.
Bring to boil over medium heat.
Boil until sugar is dissolved.
Use immediately or bottle and refrigerate.
Cooking
Parboil broccoli for a minute in boiling water.
Add salt to flare up water.
Drain broccoli and put to one side.
Heat 3 Tbsps of olive oil in a large frying pan over high
heat.
Stir-fry chicken until golden.
Add the sauce from above.
Add mushroom and stir for one minute.
Add broccoli and red capsicum and stir for a minute.
Mix two teaspoons of corn flour with cold water in bowl.
Add corn flour mixture to sauce to thicken.
Remove from heat.
Assembling
Scoop 1.5-2 cups of rice into individual donburi bowls.
Cover rice with stir-fried chicken and vegetables.
Moisten with a few Tbsps of sauce.
Serve immediately.
