MOLE POBLANO

You can buy the glass or small jar of Mole Poblano
at any market that sells Mexican Specialities.


2 tablespoons lard or shortening
1/4 can of an 8 ounce can tomato sauce
1/2 teaspoon salt, or to taste
1/4 piece of a small onion
2 tablespoons minced onion
2 medium-sized garlic cloves
1 small chicken
a pinch of cumin

Cut the chicken into pieces and put the pieces in a pot with water. Put the piece of onion in it and the 1/2 teaspoon salt and boil. When it is done, turn off the heat. With 1/2 cup of the chicken broth, mix half of the glass only of Mole Poblano. Grind the garlic cloves, the cumin, the 2 tablespoons of minced onion, and 1/4 can of tomato sauce with the 2 tablespoons of lard or shortening. Bring to bubble.

When it begins to cook, add the mixed Mole Poblano and cook together.
When it is all cooked (don't turn off the heat, let it still cook), pour in the rest of the chicken broth (or soup) little by little until it is not too thick and not too thin,
then put in the pieces of chicken. It is done.
