MEXICAN RICE

INGREDIENTS

1 Onion, chopped
1 Clove Garlic, minced
3 tablespoons cooking oil
2 cups bouillon, or more if needed

1 cup tomato puree
1 tablespoon minced parsley
1 tablespoon diced Jalapeno peppers
1 cup uncooked rice

PREPARATION

1.) Cook onion and garlic in oil until golden
2.) Add rice and cook until colored
3.)
Add remaining ingredients and simmer, covered, over low heat for 12 minutes
4.) After 12 minutes, check and add more bouillon if needed. Re-cover and simmer about another 12 minutes or until rice is tender and liquid is absorbed.
